The senior, an All-Area First Team selection this season, signed with Santa Fe College Tuesday.
Dinkins played a key role in leading the Chiefs to a berth in the Class 8A regional semifinals.
Santaluces got off to a rocky start, but closed strong and won the District 10-8A championship.
The Chiefs edged Boca Raton in triple overtime to win the district title, and then defeated Palm Beach Gardens in the regional quarterfinals.
Dinkins averaged 13 points and nine rebounds for Santaluces, which finished 22-7 overall.
